Beautiful Spring Day at Galena!

It was a gorgeous sunny Sunday and I was getting ready to waste my time procrastinating about doing chores as usual. My Mom asked if I wanted to go up to Galena to snowshoe while she skied. I really hate last minute plans, and I almost didn't go, but I decided that since I rarely get to hang out with my Mom, I'd regret it if I didn't. I'm glad I changed my mind! It was great to get outside and be in the sunshine with the blue sky and the sparkly snow and get my blood pumping and see my Mom smile. The dogs had a blast too! Pictures below:

The day was so incredibly sunny and beautiful. The shattered ice on the creek looked really cool, but didn't translate well through the photo.

You may think my Mom is quite the rebel from this photo, but Rocky was one of probably 12 dogs on the deck at Galena Lodge.

It's (finally) beginning to look a lot like Christmas...

Today is the last day of work before Christmas!!! Tonight I'm going to my friend's house for Hanukkah dinner. Tomorrow Henry is driving up for Christmas Eve celebrations. Then on Christmas morning we will drive back down to celebrate with his family. Last night I made cookies and brought them to work this morning for my coworkers. Here is the recipe:

Peanut Butter Oatmeal No Bake Cookies

10 minutes prep.
Makes 12 cookies. (I find that it makes more than 12 - around 18 or so)

3 cups old-fashioned oatmeal
5 tablespoons peanut butter (reduced fat works great)
2 teaspoons vanilla
2 cups brown sugar
½ cup milk (non-fat works great)
¼ cup butter

1. Mix together the first three ingredients. Set aside.
2. Stir together sugar, milk, and butter in medium saucepan. Cook over medium heat stirring occasionally – full boil for one minute.
3. Immediately pour over oatmeal mixture and stir thoroughly but rapidly.
4. Spoon cookie size scoops (heaping tablespoon) onto waxed paper or plastic wrap and let set until firm (refrigerate if in a hurry).

Woke up yesterday morning to see that we had finally gotten a proper "dump." My car had about a foot of snow on it.
